    Lazy Masala chicken

    Its a combination of a sweet cold and warmth in the air and this recipe is something I don't have to think much about. The variation and combination is endless, I haven't added much veggies but don't be scared to. Personally its a thick gravy with crispy chicken. Pair it with bread, chapati or have it just like that. It taste awesome.


    You will find most of the ingredients you have in your pantry and all you need to come out of that shell of yours and swing yourself in the kitchen.


    WHAT YOU NEED:

    Chicken thighs

    Tomato: Finely chopped

    Onion: Finely sliced

    Green chilly: finely chopped

    Garlic: Roughly chopped

    Salt to taste

    Black pepper powder

    Coriander powder

    Turmeric powder

    Cumin powder

    Tomato puree

    Soya sauce

    Mustard oil: you can choose any oil of your choice


    Marination:

    Take your chicken thighs and marinate it with salt, pepper, cumin, coriander and turmeric powder and add some mustard oil and keep it for an hour or overnight.

    PROCEDURE:

    Heat your pan on a medium flame and sprinkle some oil, add the marinated chicken and tomato, green chilly and onion and allow the chicken skin to get crispy. Post 5 min add cup and two of water and cover the pan with its lid and let the steam cook the chicken slowly. When the gravy starts to thicken add tomato puree and soya sauce and let it cook for more 10 to 15 min. (when the flesh starts to leave the bone, its a sign of a cooked chicken)

    You can serve it as it is or with bread or chapati at the side. Sprinkle some lime juice if needed.

    Stir fry chicken sausage with mushroom and fenugreek

    Its winter coming and having some warm and light is all I am looking for plus keeping oil and the salt content low in my food is an important aspect of my daily cooking, to add further I love mixing, specially things I was always skeptical about.

    If you have these stuff lying in your pantry feel free to mix it with a hint of Methi aka fenugreek leaves, trust me the light bitterness is the real magic.


    Its a easy to make tossed in a min and two recipe.. all I mean.. is quick!



    THINGS YOU NEED:


    Chicken sausage (diagonally cut it into chunks)

    Button mushrooms or any available in your local market. (roughly sliced)

    White Onion (thinly sliced)

    Garlic (roughly crushed)

    Green chilly (thinly chopped)

    Salt to taste

    Red chilly flakes

    Black pepper powder

    Fenugreek leaves

    Procedure:


    Post you have cut the respective ingredients, bring your pan to medium heat and sprinkle oil just to give a coating for the base. Add the crushed garlic and green chilly and little of red chilly flakes, let it get a little brown

    Add your sausage and mushrooms and toss it evenly, post the sausage is slightly brown sprinkle some salt and black pepper and toss it evenly all over again.

    Mix the fenugreek (eat it raw with the dish if you wish to enjoy the bitterness) leaves and serve it hot... over a plate.

    Wood apple dipped black rose tea


    who doesn't like a nice cuppa tea.. Personally I die for one nice cuppa tea for myself but grabbing the same everyday is not my thing. I tend to get bored easily, which is in a way good and bad at the same time. One thing to share with you all is I am a tea lover and I collect and I love to mix and match things to give it a new meaning... new flavor.


    If your are one of those who runs away from plain non milk tea thinking it to be bland, well I guess you need to give a try to this.. A nice wood apple dipped black rose tea. Its aromatic, its sweet and its awakening.


    WHAT YOU NEED:

    Keep all the ingredients a table spoon enough to serve 3 to 4 cups.

    Dry rose petals

    Kashmiri kawa

    Clove powder

    Cinnamon powder

    Wood apple Honey (to taste)

    Dried apple



    PROCEDURE:


    Bring filtered water to boil, add all the ingredients except wood apple honey, and let it steep for a good 10 to 15 min (depending how intense you want the taste)

    To add: Its has a mild caffeine concentration


    Add wood apple honey as per your taste and wallah your morning tea is ready.


    Its lazy and its yummm!
